Next, melt two squares of at least 80% dark baking chocolate and melt them in a double boiler. Once this is done put a small amount of chocolate onto the parchment paper and then top it with the banana. Add a small amount of chocolate over the banana and put into the refrigerator to allow the chocolate to harden. If you do not eat them all, you can put them into the freezer. There are two servings per banana.
They count as 2 Extras and ½ SmartCarb. If you add a half cup of fresh strawberry slices and toss them in a bowl, you will have 1 SmartCarb. If you like a little texture to your food, there is always the option to roll the chocolate coated bananas in crushed peanuts.
